Hong Kong’s exquisite Japanese restaurant MINATO will host a four-night “Flavours of Nagano” Japanese guest chef dinner from 7 to 10 October 2026, inviting Chef Masahiro Tanabe from Hikariya-Nishi (ヒカリヤ ニシ) in Nagano Prefecture, Japan, to showcase unique local flavours for Hong Kong food enthusiasts.
The Healing Gastronomy of Nagano Flavours
This feast’s menu will feature a new-style Japanese cuisine that incorporates French techniques, showcasing the seasonal bounty of Nagano Prefecture. Renowned for his wellness gastronomy centred around natural vegetables, Chef Tanabe will present eleven exquisite dishes paired with sake from Nagano’s “Iraka Sake Brewery”, allowing guests to savour the unique flavours of the dishes in a refined atmosphere.
Highlights of the Feast and Menu Design
With only 30 seats available, the feast ensures each guest enjoys a unique dining experience. The menu includes refreshing starters such as “Vegetable Caviar Spring Rolls with Spanish Gazpacho” and “Straw-Grilled Bonito with Fermented Tomatoes”, showcasing the fusion of French and Japanese culinary techniques. The main course features “Scallop Risotto with Vegetable Mousse” and “Celeriac Truffle Butter Bread”, each dish demonstrating Chef Tanabe’s exquisite mastery of ingredients.
Additionally, MINATO’s signature teppanyaki dishes will be a highlight of the evening, including “French Foie Gras” and “A5 Miyazaki Wagyu Tenderloin”, allowing guests to experience the essence of Japanese cuisine while enjoying the food.
Sake Pairings and Unique Brewing
To enhance the dining experience, the dinner will be paired with five popular sakes from Nagano Prefecture’s “Iraka Sake Brewery”. These sakes are brewed with extremely soft water, showcasing unique flavours that complement the dishes.
