Michelin one-star restaurant LATURE will celebrate its 10th anniversary on 8 October 2026. Chef Takuto Murota will lead guests on a journey through the restaurant’s decade of development, focusing on Japanese game and traditional French cuisine. Since 2018, LATURE has consistently been awarded the Michelin one-star honour and has received the Michelin Green Star and the Black Pearl Restaurant Guide’s diamond accolade.

Culinary Philosophy and Heritage

Since opening in 2016, Chef Takuto Murota has adhered to the principles of sustainability, promoting traditional Japanese hunting culture. As one of the few ‘hunter chefs’ who personally forages for wild ingredients, Chef Murota regularly travels to the mountainous areas of Chiba Prefecture to track and study wildlife, transforming his field experiences into creative inspiration.

Unique Game Dishes

At LATURE, the chef creates a variety of signature dishes based on the philosophy of ‘zero waste’. For example, the Venison Blood Macaron is made from traditionally discarded deer blood, showcasing innovation and refinement in French cuisine.

Additionally, the Roasted Japanese Venison and Venison en Croûte highlight the unique flavours of venison. Chef Murota specifically selects wild deer from Japan’s remote islands to ensure tender meat and pure flavour.

Wild bear meat is also one of LATURE’s prized ingredients, which the chef transforms into exquisite dishes, demonstrating respect for hunting culture. Each dish is adjusted according to the characteristics of the foraged ingredients, ensuring the natural flavours are preserved.

Asian Culinary Tour

To celebrate its 10th anniversary, LATURE will embark on an Asian culinary tour, starting in October with a collaboration in Seoul with Chef Kim Jin-Hyuk of the Michelin two-star restaurant Alla Prima, perfectly blending Japanese game cuisine with modern Asian flavours. Following this, the tour will continue to Bangkok for collaborations with other renowned chefs, showcasing Japan’s game culture.

LATURE invites food enthusiasts to explore Japan’s rich and long-standing game culture, with a menu that beautifully merges Japanese wild ingredients with the essence of classic French cuisine, offering an unforgettable dining experience.
