Dim Sum Library will launch a new siu mai series on 12 October 2026, reinterpreting this classic Cantonese dim sum. This series features four limited-time creations that infuse modern flair into siu mai through innovative cooking techniques and bold flavour combinations, breaking away from traditional bamboo steamer confines.
New Creations, Breaking Tradition
Siu mai, one of the favourite dim sums among Hong Kong locals, has long been a must-order choice during tea gatherings. The culinary team at Dim Sum Library has not only changed the cooking methods for siu mai but has also innovated the fillings. The four new creations include Baked Seafood Siu Mai with Vermicelli, Fried Thai Basil Siu Mai, Black Bean Sauce Siu Mai, and Sake-Infused Abalone Siu Mai, aiming to blend flavours from different regions and provide diners with a fresh taste experience.
Introduction to the Four Creative Siu Mai
- Baked Seafood Siu Mai with Vermicelli (3 pieces HK$88): Reimagining traditional siu mai with a unique baking technique, it contains scallops, squid, and octopus, paired with rich garlic and smooth vermicelli for a bouncy texture.
- Fried Thai Basil Siu Mai (3 pieces HK$88): Inspired by crispy wonton skins, the filling features minced pork, black fungus, and fresh bamboo shoots, seasoned with Sichuan-style fish fragrant sauce for a mildly spicy herbal aroma.
- Black Bean Sauce Siu Mai (3 pieces HK$88): Drawing inspiration from classic steamed pork ribs in black bean sauce, it pairs aged black beans with the natural sweetness of pork to present a rich savoury flavour.
- Sake-Infused Abalone Siu Mai (2 pieces HK$98): Topping traditional pork and shrimp steamed siu mai with fresh abalone slow-cooked in Chinese rice wine, infused with ginger and a hint of spice.
These creations not only retain the classic flavours of siu mai but also boldly experiment with cooking methods, allowing diners to enjoy deliciousness while experiencing novel textures.
The new siu mai series at Dim Sum Library will be available from 12 October at Pacific Place in Admiralty, with prices starting from HK$88. Diners are welcome to come and taste.
